Today I will be making sabudana kheer or tapioca pudding. This is an eggless pudding. A very special dessert. Hindus eat this on fasting days. This is very simple and easy recipe to make with very few ingredients. Touch of saffron and cardamom gives a very nice flavor. This recipe will serve 4. For this recipe we need: 3 cups of milk 1/3 cup of tapioca or sabudana 3 tablespoons of sugar 1/8 teaspoon of cardamom powder Few strands of saffron. And about 1 tablespoon of sliced pistachios. So first we are going to have tapioca ready. So here we have 1/3 cup of tapioca. So wash it and soak it in about 1/3 cup of water for about 2 hours. And as you see it has become more than double in volume and puffed up. And it has absorbed all the water. We are going to cook the tapioca with the milk. Boil it till it is translucent and cook and then add the other ingredients. So first we are going to boil the milk. I like to use the heavy bottom pan for boiling the milk. So first I am going to add little water. It helps milk not burning in the bottom. So now we are going to add the milk. And after milks comes to boil I am going to reduce the heat from medium high to medium. And let it cook for another 7-8 minutes. So milk will be reduced to about 2.5 cups. Milk has come to boil. So reduce the heat to medium. And let it boil for another 7-8 minutes. Keep stirring so milk doesn’t spill over. But make sure in between 7-8 minutes you do stir the milk occasionally. And stir from the sides also so it doesn’t build up. Milk has been boiling for about 7 minutes. And it’s the time to add the tapioca. And again let it cook till the tapioca becomes translucent and soft. So this should take another 3-4 minutes. This has been about 5 minutes. And as you see, tapioca is cooked and it’s translucent in the color. And I am going to add sugar. Cardamom Saffron And pistachios. Just save little bit for garnishing. And let it cook another 2 minutes and this kheer will be ready. It is smelling really good. Saffron and cardamom. Tapioca doesn’t have much of it’s own flavor. So cardamom and saffron makes it really taste good and very delicious. Kheer is ready. And it will become little thicker in texture as it cools off. Tapioca pudding is smelling great. I love these smell of saffron and cardamom together. This is a gourmet dish, very delicious. You can serve this hot or chilled. Your family and friends will enjoy it. Thank you.
