Welcome to How To Cook That I am Ann Reardon. Today we are going to make home made nougat and as with all candy making, you need to get a lot of things ready before you start. You need to get your egg whites into a bowl and have an electric mixer you need the nuts and dried fruit that you want to mix through your nougat a tray lined with non non-stick
baking paper and a candy thermometer and then a wide saucepan to put sugar, glucose syrup and honey in it. For a printable copy of the recipe go to the website www.howtocookthat.net www.howtocookthat.net Turn the heat onto high and stir the sugar and glucose until they’re dissolved. Wash down the sides of the pan with a wet pastry brush and whisk egg whites until they form soft peaks, while you’re allowing your sugar syrup to heat up to around 250 degrees fahrenheit or 120 degrees centigrade. Turn the beaters back on and slowly pour in three scoops of your hot sugar syrup into your egg whites and then keep those beaters running while you return the pan to the heat. Then boil it without stirring until it reaches 300 degrees fahrenheit or 150 degrees centigrade. Then immediately pour, it into your egg whites with the beaters running and stir It’s going to get thick really quickly so stir in your fruit and your nuts and straight away pour onto a tray. If you want flat bars place another sheet of non-stick
baking paper over the top and flatten it out using a rolling pin. Leave the tray on the bench until it’s completely cooled and then turn out your nougat and peel the paper off it. Then using a very sharp knife, push down hard in a rocking motion cut through the nougat and cut it into bars. Thanks for watching How To Cook That.
