– Hey guys. Today I’m going to share a recipe with you from my friend Stacie
Billis of One Hungry Mama. Many of you may know her wonderful
YouTube channel and blog, but last month she
released her first cookbook called Make It Easy. The title alone is right up my alley. Stacie’s book includes a
supermarket guide, pantry basics, and 120 mix and match recipes that will become your new favorites. And the one that caught my attention is her one bowl lemon ricotta pound cake. It is fantastic. It’s the perfect dessert
for summer entertaining if you want something super
easy and super delicious. Let me show you how to make it. You’re gonna start with eight tablespoons of unsalted room temperature butter. (bright music) To that you’re going
to add a cup of sugar, and then half a cup of
whole milk ricotta cheese. So I like to mix these
three things up first to make sure everything
is well incorporated. Then you’re going to add a
teaspoon of fresh lemon zest and four tablespoons of fresh lemon juice, which is the juice from about two lemons. And then we’re also going to add a teaspoon of vanilla extract, and a half a teaspoon
of salt, and four eggs. You want to add the eggs one at a time, making sure that each one
is getting incorporated into your mixture. And then we’re going to
add our dry ingredients right to this bowl. So you’re going to take two cups of flour, three quarters teaspoon of baking powder. Just go ahead and make sure you give it a good dusting all over the
bowl so it’s well distributed. And a half a teaspoon of baking soda. Go ahead and do the same thing. And then with your wooden
spoon or a spatula, just mix up the dry ingredients
into your wet ingredients to make sure that
everything is incorporated. And then you’re going
to transfer your batter into a well-greased loaf pan. I’m using a nine by five pan. That will do the trick. And then you’re going to
put it in a 350 degree oven for about one hour. So you may just want to
check it at 55 minutes, but that top should be
nice and golden brown and the cake nicely risen. And then you can cut it into thick slices and you’ll see how delicate
and moist this cake is. It is so delicious. I love this recipe. I think it’s such a fantastic
