*music* Hi this is Steph Gaudreau from StupidEasyPaleo.com and today we’re making my Paleo Chick-fil-A aka
junk free chicken nuggets. This recipe has actually become a go-to for moms and
dads with picky kids and from what I’ve heard it’s totally kid-approved. To make
this recipe you’re going to want about a pound of chicken breast. I take the chicken
and I cube it up into nugget-sized chunks. Then comes the most
important part: marinating the chicken in the pickle juice. I know it sounds really
weird but the pickle juice gives it a nice background of flavor. It also
makes it tenderized because what you’re basically doing is brining the chicken.
When you brine chicken or pork or any kind of lean meat it makes it stay juicy. If you don’t have pickle juice you can also use a combination of just salt and
water. If you can, try to marinate the chicken for at least two hours. Once the
chicken is done marinating you’re going to pour the pickle juice out. And then
we’re gonna add a couple of different ingredients. The first thing we’re going to
add is a combination of an egg and some coconut milk. This is going to
provide the liquid that the coating is going to stick to.
Once you coat the chicken with the egg wash, you’re going to pour most of it
out. You want to let a little bit of liquid stay behind because that’s going to
help the spices stick to the outside. Now you’re going mix together the dry
ingredients. This is going to be coconut flour and arrowroot flour.
Then you’re going to add smoked paprika—that gives a nice smoky
background flavor, garlic powder onion powder, and salt and
pepper. Mix all of that together—and then this is so easy—you dump that into
the bag and give it a good massage around so that everything gets really
well coated. The last step is to fry these up. I really like a mixture of
coconut oil plus avocado oil because it has a higher smoke point. You’re going to fry the chicken for a couple minutes on both sides and when it’s
golden brown, it’s ready. Serve these Paleo Chick-fil-A
grain-free nuggets with your favorite dipping sauce. They are going to be a
huge hit for the family. I would recommend making a double batch because
