(upbeat guitar music) – Hey Health Nuts, welcome
back to HealthNut Nutrition. Today’s recipe I’m so excited about. It’s been one of my favorite
go-to recipes lately. It is my Roasted Vegetable Power Bowl, and it’s basically like
a rainbow in a bowl because there’s so many fun
colors and textures and flavors. I absolutely love this recipe, and you just pop a fried egg
on top with some sriracha and it’s just like heaven in a bowl. I am so excited to share
this recipe with you guys, and before we hop in, I
wanted to remind you guys to subscribe to my channel

button so you will get notified when I post a video on my channel. Yeah, that’s it for now. Let’s hop right in to the recipe and I will show you guys how to make it. For this recipe you’re
going to need cauliflower, kale, carrots, quinoa,
marinated artichokes, a couple eggs, avocado, lemon, olive oil, hummus, and for seasonings
I have some smoked paprika, turmeric, some mixed dried
herbs, and garlic powder. And you can’t forget
your sea salt and pepper. Oh, and of course sriracha, ’cause that’s delicious on everything. To cook your quinoa,
you just want to add in your dried quinoa to a
saucepan with some water. Bring it to a boil. Once it’s boiled, you can lower it down and simmer for about 10 to 15 minutes until the quinoa has
soaked up all of the water. I’ve peeled and chopped my carrots and placed them into a
parchment-lined baking pan. I’m drizzling on some
olive oil and my seasonings and giving them a quick massage so that they are nice and coated. Then pop them into the oven to roast. Next up we’re gonna prepare our kale, so I’ve just washed and
roughly chopped the kale. You can leave the stems on, since it’s gonna roast
and get nice and cooked. Drizzle with a bit of olive oil. Squeeze of lemon juice. Some seasoning. Salt and pepper. And then get in there with your hands and give it a quick
massage to just get them nice and softened up
and really get the oil covered on all the leaves. Essentially we’re making quick kale chips. Pop those into the oven to roast. Last but not least,
for our veggies we have some cauliflower, which I’ve washed and just chopped up into little florets and placed them onto a
parchment-lined cookie tray. Drizzle with a bit of olive oil. Throw on some seasoning, some sea salt and black pepper, and give them a quick massage. As you can see, I love to
massage my vegetables. (laughs) And then pop those into the oven to roast. Next up, get a large skillet. Add a little bit of olive oil. You can also use avocado oil. I’ve been starting to
use that in my cooking, and it’s great because it
has a higher smoke point than olive oil. Heat up your oil to about medium heat, and then crack in as many eggs as you need depending on how many people
that you’re gonna be feeding. I like to pop a lid on so
it cooks pretty quickly and evenly on top. And now it’s time to
assemble our Power Bowls. Add in your quinoa, your roasted veg, sliced avocado, marinated
artichokes, hummus, and then top everything off
with a nice sunny-side-up egg, which is really the best part
because the yolk almost acts as the dressing for
everything when you break it. And there you have it. That’s how you make my
delicious rainbow Power Bowl. Oh, and I forgot, you may or
may not want to drizzle it with some sriracha if you like some heat. All right, so that’s gonna
