and welcome to our kitchen! We’re making our Easy Chicken Enchiladas.

the time. These enchiladas are easy! Start by making the creamy sauce — cook
some garlic in a little oil until fragrant — it only takes a minute or so. Now add
salsa verde, which is a green salsa made from tomatillos. You can make your own or save
some time and buy it from the store. Once the salsa has heated through, take it
off the heat. Stir in some sour cream – which makes it extra creamy — and add fresh chopped
cilantro. Set about a cup of the sauce aside for later
then work on the enchilada filling. Add shredded chicken and cheese to the remaining
sauce. We use our simple shredded chicken recipe for the chicken — check it out, it’s
really easy! Now, assemble. Oil the bottom of a baking
dish then add half of the reserved sauce from earlier. Spread it out then move on to filling
the enchiladas. Grab a tortilla, add some of the chicken filling
then roll up. Place each enchilada seam-side-down into the baking dish. Finish with the remaining
sauce and more cheese. Cover the baking dish with some foil then
bake for about 15 minutes. Uncover and bake another 10 minutes until the cheese is melted
and bubbly. Finish with a little more fresh cilantro and
that’s it! Easy, tasty chicken enchiladas perfect for tonight or tomorrow … or the
