– Hey, guys. Today I’m gonna share with you a recipe for a butterscotch blondie. Now, blondies are a great thing to make, especially if you’re kind of tired of the old-fashioned brownie and you wanted to try something new. It’s also a recipe that
you guys keep requesting, so I thought it was time to get to it. So in the bowl of an electric mixer, you’re going to add one cup of butter. To that you’re going to add
1/2 a cup of white sugar, and 3/4 cup of brown sugar. You wanna beat that up just until the butter is nice and fluffy, and all of that sugar is incorporated. Then you’re gonna add two
room temperature eggs, beating them in between in addition, and scraping down the bowl as needed. And then you’re also gonna add a teaspoon of vanilla extract. And then you can beat that up. Then in a smaller bowl we’re gonna combine our dry ingredients. You’re gonna add 1 3/4 cup of flour. The secret to a nice, chewy blondie is not too much flour. So easy does it. And then a 1/2 teaspoon of baking soda, and a teaspoon of salt. And then you can whisk that up. Then you’re slowly gonna
add the flour mixture to your batter mixture, beating in between each addition and scraping down the bowl. And then we’re also going to add a 1/4 cup of butterscotch chips. Now this is what’s going
to give these blondies that beautiful butterscotch flavor. But one word of caution
about the butterscotch chips. They are really sweet, so if you don’t like sweet things keep it at a 1/4 cup, and then a 1/2 cup of walnuts. And then you can beat that up until everything is nice and combined. And then we are going to turn this out into a brownie pan. Now, I recently discovered a removable-bottom brownie pan, which is really genius, because then you don’t have to mess around with the parchment paper, and it makes for a really easy release of your blondies once they’re baked. If you’re interested in
knowing where to get one, I’ll put a link in the description. But if you don’t have one like this, you could just use the parchment paper, and make sure that you line it well so that it’s easy to remove
once those blondies are baked. Now, make sure your pan is
treated with some baking spray, and then go ahead and spread
out your blondie mixture. And I like to smooth it
out with a spatula first, and then go in with an offset spatula just to smooth it out and make sure all those
corners are nice and even. Then you’re gonna put this in
a 350 degree fahrenheit oven for just about 35 minutes. Now you do wanna make sure that these are nice and cooled before you try to handle them, especially if you’re using
the removable-bottom tin, because it can be really hard to handle if that thing is hot. And then you can go ahead and
just cut them into squares. I like to get about nine
squares out of this size tin, and I’m using a 9×9 tin. And then you can go
ahead and display them. I like to put them on a
nice rectangular platter with all of their edges tilted up. And there you have it, one delicious, decadent blondie. I hope you guys give this one a try, and let me know what you think. And remember, all of these recipes can be found on my website entertainingwithbeth.com if you would like a printable version.
