(classical orchestra music) (thunder rumbling) Today, we’re going to make strawberry ice cream. If you don’t have an ice cream machine…don’t do this…because it won’t work. These are all the ingredients you need. You will need: 700g fresh strawberries (in-season), 200g whole milk, 200g heavy cream… …50g liquid glucose or corn syrup, 150g castor or granulated sugar… …1/2 a vanilla bean (scraped and put in the cream)… …and only 3 egg yolks (large amount of fruit). Seems like a lot. But it will come together. Put the strawberries in a saucepan with the glucose or corn syrup. Cook for approx. 15-20 minutes or until sufficient flavour. It’s all about taste. You must taste your food – It’s necessary. Baking is a science but also a philosophy. This is what the strawberries should look like. Take the pan off the heat and cool. For the anglaise: Scald the cream, milk, vanilla, and 1/2 the sugar… Meanwhile, whisk together the egg yolks and the remaining half of sugar. Whisk immediately to avoid lumps. This is about what the cream should look like. Too avoid boiling over, remove from heat immediately. This is what the egg yolks should look like. A light ribbony texture. Slowly temper the hot cream into the egg yolks, gently, so you don’t cook the eggs and end up sweet scrambled eggs instead of ice cream… Return the mixture back to the saucepan and heat on low-medium for 8-10 minutes. Stir constantly with a rubber spatula (not a circa. 1977 wooden spoon) When the foam starts to disappear from the surface, your creme anglaise is coming together. The creme anglaise should coat the back of a spoon. Remove from heat, sieve, and cool. Puree the strawberries. Sieve. Add to creme anglaise and emulsify with an immersion blender. LET’S MAKE SOME ICE CREAM!!!! Transfer to ice cream machine or batch freezer. DONE!!! Transfer to container, place in freezer to harden and enjoy! Here’s a plated dessert with the ice cream.
