Hey there, Lacy here with the Sweet Pea Chef. And if you love fried rice but you want to
eat healthier, I have got a great recipe to share with you today. We’re going to make Chicken Cauliflower Fried
Rice that is low in carbs but high in flavor. So, let’s get started. First, heat a large pan over a medium-high
heat and add the sesame oil. Now season the boneless, skinless chicken
breast with kosher salt and black pepper. Then place into that hot oil. We’re going to cook for 4-6 minutes per side,
turning occasionally, or until the chicken is cooked through. Once it’s cooked through, remove from the
pan and dice into bite-sized pieces and then set aside. To make the Cauliflower Rice we’re going to
grate a head of cauliflower using a kitchen grater. You can also use a food processor for this. Once you’ve grated all the cauliflower, add
that to that same pan adding in a little bit more sesame oil if you need. We’re going to cook the Cauliflower Rice over
medium-high heat until it’s nice and tender. Then, we’re going to remove it from the pan
and set aside. Now, add in the diced carrots into that empty
pan and cook until they’re mostly tender followed by low-sodium soy sauce, peanut butter, and
chili pace, and stir to combine. Next add in the frozen edamame, minced garlic
and sliced green onions. And then cook until it’s heated through. At this point, let’s return the cauliflower
rice and the diced chicken back into the pan and stir to incorporate. Now we’re going to push the Fried Chicken
Cauliflower Rice mixture to one side of that skillet. We’re going to pour in our beaten eggs into
that empty side of the pan. Then we’re going to scramble it. Once the eggs are mostly scrambled, break
it up with a spatula and combine with the rice mixture. So, now we can enjoy our Fried Rice and still
